Beskrivelse
Snailase is a mixture of enzymes prepared from the crop and digestive tract of snails, containing more than 20 enzymes including cellulase, pectinase, amylase, and protease. It can be used for yeast cell wall disruption, and is therefore widely applied in cell biology and genetic engineering research. It can also be used as a feed additive to improve feed digestibility, or in juice clarification, debittering of citrus fruits, and jam production.
After treatment with a sulfhydryl compound, yeast cells are suspended in an isotonic sorbitol solution at pH 5.8–7.2. Under these conditions, 30–40 mg of enzyme per gram of cells at 37°C for 1 hour will dissolve the cell wall with a disruption efficiency exceeding 90%.
